Daily Recipe - Choc Chip Cookies

Hi everyone, I have managed to get back on board. Sorry it has taken a few days and if you drop in from time to time you may know that I have Multiple Sclerosis. There are days when I am not myself and find it difficult to function as I once did, so I take a few days off and then I am ready to get back into my daily routine.

So here you go today I made:

 Chocolate Chip Cookies from the Nestle Choc Bits packet.

225 g softened butter
1/2 cup sugar
1/4 cup sweetened condensed milk
2 cups plain flour
1tsp baking powder
3/4 cup nestle milk choc bits

Preheat oven to 190 degrees C
Cream butter and sugar in a medium bowl
Beat in sweetened condensed milk
Cream until the mixture is light and fluffy
Sift flour and baking powder
Stir into butter mixture with nestle milk choc bits
Roll tablespoons of mixtures into balls
Place on a lined oven tray
Press cookies down to flatten
Bake in preheated oven for 15 minutes or until the cookies are golden brown.

Daily Recipe - Chewy Chocolate Slice

Good Morning Everyone,

Today`s recipe will tickle your taste buds if you enjoy chocolate as much as I do. Have fun and remember to post your photo!

125g butter melted
1 cup firmly packed light brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1/2 cup plain flour
1/4 cup self raising flour
2 Tablespoons cocoa powder
1/2 cup desiccated coconut
1 tablespoon desiccated coconut extra

Chocolate icing
1 cup icing sugar
2 tablespoons cocoa powder
10g butter melted
1 1/2 tablespoons hot water, approx

Preheat oven to 180 degrees C. Grease 20cm x 30cm slice pan; line with baking paper.

Combine sugar, butter, egg and vanilla in a medium bowl.
Stir in sifted flours and cocoa and then coconut.
Spread mixture over base of pan.
Bake about 30 minutes r until slice is firm.
Meanwhile make chocolate icing.
Spread hot slice with chocolate icing; sprinkle with extra coconut.
Cool in tin before cutting.

Chocolate Icing
Sift icing sugar and cocoa into medium bowl; add combined butter and water, stir until icing is spreadable.

prep and cook time 50 minutes makes 24

Keep in an airtight container for up to 1 week

Anzac Biscuit Photos

Hello All,

As promised here are the Anzac Biscuits which I cooked from the recipe which was posted yesterday.


They are delicious, nice and chewy just the way Lord Huntingdon likes them.

Daily Recipe - Old Fashioned Raspberry Slice

This is one of Lord of Huntingdon`s favourites. Give it a try and see what you think, let me know if you have come up with any variations and I will be keen to give them a try.

Old Fashioned Raspberry Slice

120g butter
120g sugar
2 egg yolks - keep whites aside
1 1/4 cups S.R flour
Pinch salt
3 Tablespoons raspberry jam

Cream butter and sugar until light and fluffy.
Beat in egg yolks.
Fold in sifted flour and salt.
Spread mixture into lined slice tin.
Spread jam on top of mixture.

Topping
2 egg whites
1/2 cup castor sugar
1 1/2 cups coconut

Beat egg whites until peaks form.
Gradually beat in castor sugar.
Fold in coconut.
Spread on top of jam.

Bake in moderate oven 30-40min or until slightly brown and set.
Cut into squares.
ENJOY

Daily Recipe - Anzac Biscuits

Well here you go, the first recipe of our daily recipe collection.

I chose this one as ANZAC DAY is just around the corner.

I will post the recipe in the mornings which will give you all  the opportunity to purchase any ingredients that may be needed and then the challenge is on to make your recipe and post the photos regardless of how it looks, we will have photos posted for the Daily Recipe the following day, so please join in and have some fun and enjoy learning new recipes and sharing your own.

Anzac biscuits
These gorgeous chewy biscuits are a treat for the taste buds.

Recipe Easy To Prep 30 min
To Cook 1:00 hr

Ingredients
• 1 ½ cups rolled oats
• 1 ½ cups desiccated coconut
• 1 ½ cups plain flour
• 1 cup brown sugar
• 185g butter, chopped
• 1/4 cup golden syrup
• 1 1/2 teaspoons bicarbonate of soda
Method
Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper.
Combine oats, coconut, flour and sugar in a large bowl. Make a well in the centre. Place butter, syrup and 1/4 cup cold water in a saucepan over medium heat. Stir, 4 to 5 minutes or until butter is melted. Remove from heat. Stir in bicarbonate of soda. Stir butter mixture into oat mixture.
Using 1/4 cup mixture per ball, roll mixture into 12 balls. Place 2 balls, 10cm apart, on each prepared tray. Using the palm of your hand, flatten each ball into a 1cm-thick, 8cm (diameter) round. Bake for 17 to 18 minutes or until golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool. Repeat process with remaining mixture. Serve

Daily Quote 3

Hello All,

What a hectic day. I feel like I  have been all over Tassie today!

Lots of driving, I am glad to finally be at home.

Sorry that there have been no photos posted as I am trying to figure out how to post them.  I am computer illiterate, but learning daily - for all of those who find computers so easy please stop laughing NOW!!

The daily recipe will start tomorrow as my Daughter will show me how to add photos tomorrow, then watch out as there will no stopping me!

I am very excited to everything running smooth and to have you all join in with our chats, crafts, cooking, travels, house building and daily animal activities plus I am sure there will be much more!!

I am the type of person to tell it as it is so from time to time we may have a rocky ride but hang on as its bound to smooth out along the way. Everyone knows it`s so much more interesting with ups and downs!

My Optometrist Appointment

Today I head off to the optometrist after I drop my daughter Maddie and her friend off at school.

I am certain that this will be a short visit as in the past I have been told that I have 20/20 vision.

I sit down as directed in the GREY chair.

Why is it at this point do I start to feel like a school girl when he starts to demand answers to his questions?

Why do you need your eyes checked?

Who do you think needs to wear glasses?

Do you look after you eyes, such as moisturise and exfoliate them?

Every time I answer his question he preaches to me like he is at church giving a sermon!

As I sit there dutifully answering his questions as he is shinning lights in my eyes and getting me to read this line and that line, which line is bolder which is not I am feeling as I need to run out the door as I fear the next thing he is going to say to me is that I need glasses!

Finally as we are getting to the end of my appointment I blurt out my own question.

DO I NEED GLASSES?

His response was simple and to the point.

Well if you want to see clearer then yes you need glasses, I have a prescription here you can take it now or leave it until you are totally fed up with they way your eyes make you feel and come back and collect it as you didn't come in here and ask for my help to fix the problem you simply asked me to check your vision!!

Hello Everyone,

Welcome to my first bog with many more to come. I hope to have you all coming back time and time again and to become part of our growing family.

My aim is to invite you all into our home and to see what we are up to.

We are building a new home with a small hobby farm, with the most wonderful menagerie of animal's which we have acquired over time or rescued.

My Husband is the driving force behind our build and the property.

You will get the chance to see him create something from nothing and over time the house will be finished but our projects will go on and on.

You will get to see the highs and lows of working for yourself whilst building your family home.

We will be cooking, gardening, building, creating, working, playing, loving and much more.

We welcome everyone to add their thoughts and ideas.
