1950`s Challenge Day 7 - Baking Day

It`s cold wet and horrible here today!!

Nothing better than staying warm and cosy inside and baking.

I have asked for suggestions on my face book group MISS LILY MAY`S VINTAGE AFFAIR and have had some great suggestions. Fair being fair I chose the first recipe to make today along with 2 of Lord Huntingdon`s favourites.

The first was from a wonderful lady Simone Campbell.

Jubilee Twist1 1/2 Cups S/R Flour
2 Tbsp sugar
1/2 Cup currants
1 tbsp Butter
1 Egg
1/2 Cup milk
a little lemon peel

Rub the butter into the flour, add all dry ingredients, then the egg and milk. Roll out into two long rounds and twist one around the other. Bake for 20 mins. Boil 1 tbsp sugar and 1 tbsp water for 3 mins and put on twist while hot. Sprinkle with coconut.



Then next was a recipe that Lord Huntingdon made as boy. It has always been a favourite of his and has only been reintroduced a few months back when his Mum found the recipe.

Nougat Slice

4oz melted butter
6oz Castor sugar
1 cup coconut
1 cup mixed fruit
1 beaten egg
1 heaped cut S.R flour
vanilla

Put melted butter on top of all ingredients and mix well.
Cook 180 degrees Celsius in well greased shallow slice tin for 20-25mins
Ice with lemon icing, cut into pieces and enjoy :)

I would love to know if you try any of these.

I would also love to try any of your recipes.

Then after all this baking I made dinner.

Consisting of  pumpkin soup for entree made from scratch and satay chicken with rice for main.

If they are still hungry then they have plenty of baked goods to have for dessert.

For me it`s time to wash up and then sit down and relax with a nice cup of  coffee, I think I will have a piece of chewy chocolate slice to go with it as I believe coffee and chocolate should go hand in hand.

1950`s Challenge Day 5


I am running a day behind in putting up my photos, sorry for the delay.

I have chosen to wear a hat for day 5.

I love hats, so much so that  when my girls were younger they had a hat to match every outfit!

At the time my Husband was in the Army and we lived in a Defence Home, he came home one night and I was so excited to tell him I had made a place to hang the girls hats. To his surprise and horror I proudly showed him the 3 inch nails I had nailed into the window frame to act as a hook!!!




Getting up early every morning to make sure I have a nice cup of coffee ready for Lord Huntingdon after he gets out of the shower and his lunch made for the day is becoming tiring!!

I don`t know how the women in the 1950`s did so much in one day. I guess I have a lot of improving to do!!!

Do not despair I have no intentions on giving up. I am running out of dresses and have just ordered more!!

Baking on day 5 I made a lovely Coconut Tea Cake that my niece kindly shared with me. She said her Nan use to make it and she now makes it for her Husband. Apparently he loves it straight out of the oven with butter on top. He even heats a thick slice in the microwave if it has cooled down!!

This is the cake I made, it was simple to make just the way I like them to be. Very moist and tasty!!


COCONUT TEA CAKE
Ingredients:
1 cup S.R Flour
1 cup sugar
1 cup coconut
1 cup milk
1 teaspoon vanilla essence
Method:
preheat oven to 200'c pre grease loaf tin or line with baking paper.
combine all ingredients and bake in loaf tin for 45 mins to 1 hour.

1950`s day 2

Hi again, I must say I am really liking this challenge.

My daughter Maddie asked me "why is it for 1 year I love you in this look, it really suits you, you should do it all the time".

Lord Huntingdon also has positive comments to say and says how beautiful I look.





                                                      


Did he think before in my old tack pants that I didn`t ? LOL

It is great to get such lovely comments, especially being a bigger girl!!

Today is going well. I have made more butterfly cakes and also jelly cakes as these were both requested by Lord Huntingdon.






                                       
              There were many more of these, but this was all I found when I came back from next door!!

Lord Huntingdon has been busy cutting wood today with our neighbour on our property. It gets very cold here and will snow sometimes as we are up in the hills. So I appreciate the wood to keep us warm and luckily we have a lot on our property as it is very expensive to go out and buy it.



Wood all chopped and packed in the shed.  Fire light and lovely and warm.
Thank you Lord Huntingdon and Lord Lancewood!!

Tomorrow I will uploading the weekly menu, as in the 1950`s the housewife would have a budget to supply food for her family, and it was much easier for here to pre plan her meals for the family for the week ahead.

This is something that I have never had to worry about in the past, however I now believe that I should try to do this and live off a food budget and prepare food that will be made from scratch.

No takeaways here unless I make a substitute from scratch at home.

Any good ideas please post as I would love to try them out.

Danish fruit and custard Pastry

Danish Pastry is a favourite of many of us including myself.

I made these and they are sooo delicious its worth putting in the effort to make them. They do take 2 days to make as you need to let the pastry sit. However they are simple enough to make.

Give them a try, they will become one of your favourite recipes for sure!!

                          

Creme Patisserie
1 Vanilla Bean
1 3/4 cup milk
4 egg yolks
1/2 cup granulated sugar
3/4 cup cornflour
2 tbsp butter

1.With a sharp knife, slice the vanilla bean in half length ways. Using the tip, scrape the interior to remove seeds. Pour the milk into a saucepan and add the vanilla pod and seeds. Bring to a simmer. Remove from heat, cover immediately and allow to infuse for 15 minutes.

2. In a large bowl, whisk the egg yolks and sugar until slightly pale.
Incorporate the cornflour. Remove the vanilla pod from the saucepan and reheat the milk bringing to a simmer. Pour a third of the hot milk over the egg yolk, sugar and cornflour ( to temper the yolks ). Whisk to gether and pour the whole mixture back into the saucepan. Bring to boil while stirring with a whisk, making sure to scrape down the sides of the pan with a spatula.

3. Remove from heat and pour the cream into a clean bowl. Allow to cool for 10 minutes so that it is still hot but not boiling. Incorporate the butter while stirring. Cover the bowl with plastic wrap until ready to use.


Danish Pastry
60ml warm water
125ml milk
1 large egg
350g plain flour
7g yeast
1 teaspoon salt
25g caster sugar
250g unsalted butter cut into cubes

Pour the water and milk into a measuring jug and add the egg, beating with a fork to mix. Put to one side for a minute. Get out a large bowl, then put the flour, yeast, salt and sugar in the processor and give a quick whizz to mix. Add the cold slices of butter and process briefly so that the butter is cut up a little, although you still want visible chunks is at least 1cm.Empty the contents of the food processor into a large bowl and quickly add the contents of the jug. Use your hands to fold the ingredients together  but don`t over do it. Expect to have a gooey mess with some butter lumps pepping through. Cover the bowl with cling wrap, put in fridge  and leave overnight or up to 4 days.

To turn it into pastry, take it out of the fridge, let it get to room temperature and roll it out to a 50 x 50 cm square. Fold the dough square into thirds, like a business letter, turning it afterwards so that the closed fold is on your left, like the spine of a book. Roll out again to a 50 cm square, repeating the steps above 3 times.

To assemle use half at a time as it makes alot, if you want to freeze the other half it is fine to use within 2 months.

Roll out pastry on a sighty floured surface. Cut into squares of a desirable size. Place the custard in the middle and add your choice of fruit. Fold either side into the center as seen in the photo.
Bake in a moderate oven until golden.

Daily Recipe - Choc Chip Cookies

Hi everyone, I have managed to get back on board. Sorry it has taken a few days and if you drop in from time to time you may know that I have Multiple Sclerosis. There are days when I am not myself and find it difficult to function as I once did, so I take a few days off and then I am ready to get back into my daily routine.

So here you go today I made:

 Chocolate Chip Cookies from the Nestle Choc Bits packet.

225 g softened butter
1/2 cup sugar
1/4 cup sweetened condensed milk
2 cups plain flour
1tsp baking powder
3/4 cup nestle milk choc bits

Preheat oven to 190 degrees C
Cream butter and sugar in a medium bowl
Beat in sweetened condensed milk
Cream until the mixture is light and fluffy
Sift flour and baking powder
Stir into butter mixture with nestle milk choc bits
Roll tablespoons of mixtures into balls
Place on a lined oven tray
Press cookies down to flatten
Bake in preheated oven for 15 minutes or until the cookies are golden brown.

Daily Recipe - Chewy Chocolate Slice

Good Morning Everyone,

Today`s recipe will tickle your taste buds if you enjoy chocolate as much as I do. Have fun and remember to post your photo!

125g butter melted
1 cup firmly packed light brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1/2 cup plain flour
1/4 cup self raising flour
2 Tablespoons cocoa powder
1/2 cup desiccated coconut
1 tablespoon desiccated coconut extra

Chocolate icing
1 cup icing sugar
2 tablespoons cocoa powder
10g butter melted
1 1/2 tablespoons hot water, approx

Preheat oven to 180 degrees C. Grease 20cm x 30cm slice pan; line with baking paper.

Combine sugar, butter, egg and vanilla in a medium bowl.
Stir in sifted flours and cocoa and then coconut.
Spread mixture over base of pan.
Bake about 30 minutes r until slice is firm.
Meanwhile make chocolate icing.
Spread hot slice with chocolate icing; sprinkle with extra coconut.
Cool in tin before cutting.

Chocolate Icing
Sift icing sugar and cocoa into medium bowl; add combined butter and water, stir until icing is spreadable.

prep and cook time 50 minutes makes 24

Keep in an airtight container for up to 1 week

Anzac Biscuit Photos

Hello All,

As promised here are the Anzac Biscuits which I cooked from the recipe which was posted yesterday.


They are delicious, nice and chewy just the way Lord Huntingdon likes them.

We would love to see a photo or tell us about any variations that you have used, I hear some people make them with choc chips.

Daily Recipe - Old Fashioned Raspberry Slice

This is one of Lord of Huntingdon`s favourites. Give it a try and see what you think, let me know if you have come up with any variations and I will be keen to give them a try.

Old Fashioned Raspberry Slice

120g butter
120g sugar
2 egg yolks - keep whites aside
1 1/4 cups S.R flour
Pinch salt
3 Tablespoons raspberry jam

Cream butter and sugar until light and fluffy.
Beat in egg yolks.
Fold in sifted flour and salt.
Spread mixture into lined slice tin.
Spread jam on top of mixture.

Topping
2 egg whites
1/2 cup castor sugar
1 1/2 cups coconut

Beat egg whites until peaks form.
Gradually beat in castor sugar.
Fold in coconut.
Spread on top of jam.

Bake in moderate oven 30-40min or until slightly brown and set.
Cut into squares.

Daily Recipe - Anzac Biscuits

Well here you go, the first recipe of our daily recipe collection.

I chose this one as ANZAC DAY is just around the corner.

I will post the recipe in the mornings which will give you all  the opportunity to purchase any ingredients that may be needed and then the challenge is on to make your recipe and post the photos regardless of how it looks, we will have photos posted for the Daily Recipe the following day, so please join in and have some fun and enjoy learning new recipes and sharing your own.

Anzac biscuits
These gorgeous chewy biscuits are a treat for the taste buds.

Recipe Easy To Prep 30 min
To Cook 1:00 hr

Ingredients
• 1 ½ cups rolled oats
• 1 ½ cups desiccated coconut
• 1 ½ cups plain flour
• 1 cup brown sugar
• 185g butter, chopped
• 1/4 cup golden syrup
• 1 1/2 teaspoons bicarbonate of soda
Method
Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper.
Combine oats, coconut, flour and sugar in a large bowl. Make a well in the centre. Place butter, syrup and 1/4 cup cold water in a saucepan over medium heat. Stir, 4 to 5 minutes or until butter is melted. Remove from heat. Stir in bicarbonate of soda. Stir butter mixture into oat mixture.
Using 1/4 cup mixture per ball, roll mixture into 12 balls. Place 2 balls, 10cm apart, on each prepared tray. Using the palm of your hand, flatten each ball into a 1cm-thick, 8cm (diameter) round. Bake for 17 to 18 minutes or until golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool. Repeat process with remaining mixture. Serve
